thankful #239.. heh heh

i'm thankful for the ability to serve!!

i don't wanna sound weird, sOo let me clarify.

i enjoy cooking.. but not just ANY cooking.. i enjoy experimental cooking for the kind of person who makes eating LOOK enjoyable..




sOo... maybe i should say that i'm thankful for the ability to cook??  o_O

whatever.

it's not that serious.

ANYway.  i say all that because, my crew swears that i make the BEST omelet ever.

this isn't one of my omelets, but i thought it a decent representation..  ;)

& honestly, i like my omelets, too.. better than any i've ever had in any restaurant..

sOo.. i've decided to include a recipe in this post..

;)

ingredients:

sun-dried tomato (6-8 slices)
half of a small onion
2 cloves of garlic
one brown & serve sausage link (country recipe)
about 6 stems of FRESH cilantro
3 tbsp butter
6 eggs
shredded cheese (cheddar, jack, colby, or mozzarella or a mixture is even better)

chop all of the veggies & sausage very finely.. so you have lots of lil' pieces.
put all chopped ingredients  in a pan with one tbsp of butter.. EXCEPT for the fresh cilantro..
cook on low heat until the aroma has yummied up your kitchen (your onions & garlic should be sorta caramelized)

remove from pan.. set aside.

put eggs in a bowl, beat until all yolk is mixed
take your other 2 tbsp of butter & melt them on a NON-stick skillet on low heat that's at LEAST 12" wide..  a 14" may be better
once the butter is entirely melted & covers the WHOLE pan.. add the beaten eggs.

cook on low/med heat undisturbed.. when you see the sides are solidified, you want to manipulate just a lil' to get rid of ALL of the remaining wetness.. i even make slits in the center to let the wet egg seep in to the cracks.

once it's almost completely done cooking, sprinkle the cooked chopped veggies all over one side. then sprinkle the cilantro all over that SAME side.

add cheese on the SAME side. LOTS. unless you're lactose intolerant or sumthin.. if you ARE lactose intolerant, now would be a good time to think of someone you could give this deliciousness to..

now, FOLD the empty side onto the side with all the yummy stuff.

cook on low heat/flame for a few minutes to melt the cheeses. try to flip it if you can, but it's not super necessary..

then, eat. ;)

the only difference is you won't be bald.  unless you already are..

u smell dat? o_O

before this past week, i would've been the first person to ask about ANY foreign smell.. people who know me well KNOW that i can smell people cookin' oatmeal in Siberia.

and yet.. i've burnt things this week.
dude.. all that brown is CHEESE. o_O

you know how people say frozen pizzas taste like cardboard..? well, they're wrong. they taste fine until you burn them.. then they taste like BURNT cardboard.

don't worry, i'm not proud of that. 

seriously.

i'm tellin' you.. & this may sound craZy, but literally, when things are "done" i could smell the "doneness" before what happened two weeks ago..

and NOW. my sense of smell is BROKE. BUSTED. JACKED UP.

ha.

this isn't funny. i'm disturbed.

j-boy #1 says it's probably got sumthin to do with that good 'ol dentist maxillofacial surgeon visit i made not too long ago.. you can read about it here..

and yea.. i know what you're probably thinkin'

"here we go again!  girl, get over it!!"

but, you'd be bugged out too if all of a sudden part of you is not workin' right.. wouldn't you??

and you KNOW they say the ear, nose & throat are ALL connected.

  o___O

we 'gone be eatin' sum burnt EVERYthing 'til i get this worked out.

God help me. & my nose.

maybe i'm overreacting, right..?

okay.. to be fair.

either it's the surgery OR me just getting too distracted writing to you about all of my drama..

hmm..  ;)

i have lots of recipes that i'm attracted to.. that i'd like to make & haven't yet tried, cuz their on lil' scraps of paper tucked away in my cupboard.

BUT.. if i had this lil' recipe nook book, i'm sure i'd be alright.

OK.. i HAVE TO try this one with my kids! i can already see their faces full of delight over such amaZing creations!! these cookies MUST be yummy.. otherwise, umm.. i don't think half of the moms would even "try" to recreate this recipe..

i'll let you know if there's truth to my theory soon.. in the meantime.. maybe you wanna try to make some yourself... =)
